1 (3 ounce) package lemon jello
1-1/4 cups boiling water
1 (6 ounce) can orange juice concentrate
1 tablespoon lemon juice
1 (11 ounce) can mandarin oranges, drained
1 (8 ounce) tub Cool Whip, thawed or 2 cups whipping cream, whipped
1 (6 ounce) can crushed pineapple, drained

Dissolve jello in boiling water. Add orange juice concentrate and lemon juice. Stir in mandarin oranges. Refrigerate 2 hours or until jello has set up.
Mix together Cool Whip or whipped cream and crushed pineapple. Layer on top of jello.
