1/4 cup plus 2 tablespoons store-bought basil pesto
1 large prebaked pizza crust, such as Boboli brand
1 medium tomato, sliced
1 cup chopped artichoke hearts (canned or frozen)
1/2 cup thinly sliced red onion
1/3 cup crumbled goat cheese

Preheat oven to 425F. Spread pesto on pizza crust. Arrange the tomato slices over pesto. Top with artichoke hearts, red onion and crumbled goat cheese. Bake for 8 to 10 minutes or until cheese is melted and pizza is hot. Cut into wedges and serve immediately.

Note: If you are using the marinated variety of artichoke hearts, be sure to rinse them first.
