1 (8 ounce) package Brown and Serve Sausages, thawed
2 tablespoons oil
1 (2 pound) package hash brown potatoes, thawed
1/4 cup minced onion
6 eggs, beaten
Salt and ground black pepper, to taste

Cut sausage into 1/4" thick slices. Heat in skillet over medium low heat until lightly browned. Remove from skillet into foil or pan. Keep warm. Add oil, potatoes and onion to skillet. Cook 15 to 20 minutes turning with spatula until potatoes are done. Add eggs, cooked sausage and salt and pepper. Cook and turn lightly over medium heat until eggs are cooked.
