Name: Barbecued Salmon with Lemon-Garlic Marinade

2 tablespoons lemon zest
1/2 cup fresh lemon juice
1/3 cup olive oil
1/3 cup soy sauce
4 cloves garlic, minced
1 teaspoon red pepper flakes
1/3 cup parsley, chopped
1 pound salmon fillet
Sea salt
Lemon wedges, if desired

Mix lemon zest, lemon juice, olive oil, soy sauce, garlic, red pepper flakes and parsley. (May be done up to 8 hours ahead.)
Put salmon in a shallow baking dish and add marinade. Refrigerate for 15 to 30 minutes.
Heat grill to medium-hot or preheat oven to 425F. (If baking in the oven, cook 10 minutes for each inch of thickness.)
Oil the grill or use a piece of oiled foil. Place the fish skin-side down on the grill/foil. Close the grill and cook for 8 minutes without opening the lid. If the fish does not flake, close the lid and cook for two minutes more. When the fish is done, serve at once sprinkled with sea salt. Serve with lemon wedges, if desired.
