1/2 cup water
1/4 teaspoon salt
1/4 cup (1/2 stick) butter
1/2 cup sifted all-purpose flour
2 eggs

Heat oven to 375F. Combine water, salt and butter in saucepan. Heat to boiling. Remove from heat. Pour flour all at once into the hot mixture. Mix. Heat again. Stir quickly and cook until the paste leaves the sides of the pan. Remove from heat. Beat to cool. Add eggs one at a time. Beat after adding each egg until thoroughly mixed. Onto an ungreased baking sheet, drop the batter in mounds about 3 inches apart. Bake 45 to 50 minutes or until puffed and slightly browned. Remove from oven. At once, cut one or two slits on the side of each puff. Cool on cake rack. When cool, cut off top.
Fill with pudding, whipped cream or custard. Replace tops. Sprinkle with powdered sugar or frost.
