1 cup (2 sticks) butter, softened
1-1/2 cups granulated sugar
2 eggs, divided
1-1/2 teaspoons almond extract
2-1/2 cups all-purpose flour
Sliced almonds
Superfine sugar

Preheat oven to 325F. Line two 9-inch round cake pans with wax paper. Cut wax paper to fit bottom of pans only.

Thoroughly cream together butter, granulated sugar, 1 egg, 1 egg yolk and almond extract. Add in flour and mix well. Press half of the dough into each prepared pan. Brush each with slightly beaten egg white, sprinkle with sliced almonds and sparingly with superfine sugar. Bake until just golden. Baking times vary. Start checking after 20 minutes.

Remove from pans immediately. Cut in thin wedges.
