1/2 cup water
1/4 teaspoon salt
1/4 cup (1/2 stick) butter
1/2 cup sifted flour
2 eggs

Heat oven to 400F. Combine water, salt and butter in saucepan. Heat to boiling. Remove from heat. Pour flour all at once into the hot mixture. Mix. Heat again. Stir quickly and cook until the paste leaves the sides of the pan. Remove from heat. Beat to cool. Add eggs one at a time. Beat after adding each egg until thoroughly mixed. Onto an ungreased baking sheet, drop by teaspoonsful in mounds. Bake 30-35 minutes or until puffed and slightly browned. Remove from oven. At once, cut a slit on the side of each puff. Cool on cake rack. When cool, cut off top. Fill with tuna salad, crab salad, etc. Replace top.
